Single orchard blend made from apples grown on our farm. Fermented with wild yeast in neutral oak and stainless steel. Bottled with still and dry with 13 grams/liter residual sugar.
Acidity 46%: Goldrush, Northern Spy. Collaos, Crimson Crisp.
Texture 31%: Binet Rouge, Bulmer's Norman, Frequin Rouge, Stoke Red, Fillbarrel, Chisel Jersey, Bedan, Solarina, Ellis Bitter, Krys, Harry Master's Jersey.
Aromatics 23%: Golden Russet, Esopus Spitzenburg, Liberty.

Mojito glass at home. Intentionally still, pale gold, settled, sweaty glass.
Fruity, mulchy, soft berry, cedar nose.
Fruity, lightweight, sweet apricot, obvious goldrush apple, wine-y, subtle tannins. This is so different from last year.
Thin, creamy, strong for 7.5%.
