Рады представить вам наш новый сорт, который мы сварили совместно с пивоварней Σολο (о. Крит), а точнее с легендой пивоваренного мира - Къетилом Джикьюном, бывшим главным пивоваром культовой норвежской Nøgne Ø.

С Къетилом мы познакомились еще в 2012 году на фестивале касковых элей в Англии. Идея же совместной коллаборации родилась полтора года назад, и планировалась на май прошлого года - когда можно собирать еловые побеги. Из-за очень насыщенного расписания перед уходом из Nøgne Ø, Кьетил не смог к нам приехать, но мы таки сварили еловый IPA по рецепту, который был придуман в процессе долгих переписок. И вот, Къетил приехал к нам в Ивантеевку, уже как владелец и главный пивовар Σολο!

Мы обнаружили много общего во вкусах и поэтому был выбран не совсем обычный сорт - кислый сэзон с сухим охмелением! Как выяснилось мы очень любим и кислое пиво, и сэзоны, и сорта с сухим охмелением. Кислинку мы получили за счет использования методики, называемой kettle souring (закисление сусла перед варкой смесью штаммов лактобактерий), а также приправили хорошим количеством черносмородинового сока, который также дал прекрасную фруктовую кислинку. Пиво бродило при высоких температурах, что полностью раскрыло характер соответствующих бельгийских дрожжей. Сухое охмеление прекрасными австралийскими сортами хмеля завершает картину этого пива.

44cl bottle from Kaubamaja, Tallinn. Wasn’t too tempted by this one before I noticed that it was a collaboration brew with Σολο, then I got curious. And I’m glad I got curious. This is nice! Sour, refreshing and surprisingly pleasant! Pours slightly hazy golden with a rather large, white head. Aroma is certainly fruity and the lacto notes is quite evident. Pleasant berry flavour and a quite decent sourness, surprisingly pleasant and refreshing. Could easily buy this one again.

44cl (indeed) bottle from Dorst. Semi-hazy light amber pour with a very tall off-white head with decent retention. Notes of blackcurrant, blackcurrant yogurt, tart blackberries, minerals, herbal bitterness, dank cellar, sugar and citrus. A surprising brew, can’t say it resembles anything I have tried before. It could do with a little less sweetnes and a more dry mouthfeel, but other than that, not bad!

Pours golden, bit if white foam. Aroma is acidic, some spices and malt base in the nose, black-currants, berries. Tase is tart, yet fruity. Feels light and black-currants are also there again. Very dry and acidic, finishes super dry also.interesting beer, tannic finish.

Medium amber. Big blackberry yogurt notes in the nose, fairly sour. Very tart lots of black current, funky yeasty mouth. Very different. I appreciates it’s oddity and well constructed.

440ml bottle from Crafter Beer Shop in Moscow. The first sour ale I rated was later reclassified as a fruit beer, so I suppose this is my first sour rating. Pours opaque gold with an off-white head. Big aroma of blackcurrant, citrus and floral notes. Taste is sour blackcurrants, lactic.

Draft. Cloudy, milky-yellow color. Very good aroma: black currant, very berry, light refreshing acidity, slightly sour milk. Taste: pleasant medium acidity, currants and berries, warming, very good.

On tap. Golden, opaque. Tall white durable head. Smells of fruit acids, berries, a bit of spicy hop. Light body. The flavour is bone dry, moderately sour, fruity, accompanied by low to light floral bitterness. Very pleasant

Bottle sample at a tasting at Dancing Camel. Thanks Stas & Max. Cloudy golden with a white head. Lactic aroma with yogurt, some berries, and some pickled vegetables. Tart flavor, lactic, with yogurt, fruits, a bit lemony, and a light bitterish hint. Quite light-bodied. Nice and interesting.

At a tasting, many thanks, stable creamy bubbly head, cloudy depish orange color, fruity berry aroma with some yogurt, dominant berry flavor with some wood herbs and yogurt, light bitterness, medium mellow sourness, not too heavy. Feels like a berry yogurt. Fun and enjoyable.
