Introducing Dolore, a new addition to Music Vale Compositions, our series of spontaneous ales. Dolore sees the pairing of our two favorite dark fruits (Black Raspberries and Morello Cherries) in a carefully assembled blend of barrel-aged beer spanning three years of spontaneous brewing. The common thread between those two fruits, and what makes them special, is their own complexity and depth. There are, of course, sweet, jammy undertones to each - beyond that however, black raspberries have an unmistakable earthy/woodsy flavor while the dark cherries we source have their own floral and black currant notes. Both bring in a vinous quality that works wonderfully in the style.

Lambrusco-like appearance.
Really nice chalky, saline minerality. Brett and lacto with no acetic. Low oak and generous, but well-aged fruit. Strikingly similar to something along the lines of a lambrusco. Pinch of soft sweetness. Light funk.
Funky mineral and light oak with plentiful tart fruit. A bit more acidic than the nose lets on, with, unfortunately, a rather thin body. It exposes a lot of tannic character on the finish and just ends in a pile of acid.
