Old Cellar is the oldest beer we have released. It is a blend of three brews produced in February and March 2020.
Turbid worts were made from malted barley, wheat, and well aged hops in the style of traditional lambic brewing. The worts were innoculated with our local wild cultures through spontaneous fermentation in our coolship. French oak barrels were filled in the oldest and coolest part of our 15th Century stone cellar and left untouched to mature for five years.
The blend was made to showcase the complexity of savoury and fruit-like flavours that emerge from simple ingredients and time. The blend was primed with cane sugar to produce natural carbonation.
The resulting beer bears the essence of the cellar.

Bottle via the online shop. Lightly hazed pale gold. Solid lasting white foam. Nose has all your turbid mash with a ton of oak. Bright tangy and daft easy drinking. Yeah it’s good and probably only going to get better with a year or two on it.
