For this Oude Druivenlambik, we macerated Sylvaner grapes
on young and two-year old lambik for more than five months before maturing the grape lambik for more than a year on oak. The grapes originate from a small biodynamic wine maker from Rheinland, Germany. All cereals are sourced in
Pajottenland. The lambikken originate from seven different barrels and ten different brews. The final fruit intensity is 334 grams of sylvaner grapes per litre of Oude Druivenlambik.

Smell of vinegar, white grape, dessert wine. Clear golden/apple juice colour, no head. Aroma of vinegar, raw berries, grapes, some ice wine flavours. No carbon. Very sour, finishes medium sweet. Dry palate.

Draught Utterly clear, still, metallic golden beer, headless. Leather, leatherpolish, dried grapes as in Eiswein, cognac sour. Dried grapes, Botrytis, again Eiswein-like. Very little real acidity, but really dry. Sultanas with half the sugars dissolved in fruitacids. Very slick, oily, almost sticky despite all the drying acids. People told me the alcohol is hidden. Not really, it betrays its force in various ways. But as how they did this, I'm bewildered. Just superb.

A: clear orange, no head.
A: overripe peach, grape, plum & apricot, leather.
T: sour apricot, grape, funky leather, wood, herbs.
F: tannic wood, leather, grape skin, warming sherry-like alcohol.
P: medium body, oily texture, soft carbonation.
LIke a very funky sherry, nice!
