Our second Uncommon Expressions series cider shows patience, oak, and the perfect blend of cider apples can capture something truly magical.
This cider focuses on the charms of two famous English bittersharp cider apples - Kingston Black and Stoke Red - artfully blended with the traditional French bittersweet Michelin. These three cider apples come together in a Wild fermented, dry cider layered with the complexities of bittersweeet and sharp apples aged together just right in French oak barrels.
This juicy cider is rich and complex, with ripe red apple pie, marzipan, and orchard floor aromas. Notes of layered astringency, tannins and complex acidity give this cider a lingering finish and chewy mouthfeel.

Hazy light tan. Austere, tannic aroma. Light juiciness. More complex than the Michelin alone, I like this.

Bottle pour at Barrel Fest 2025, pours a hazy bright golden, tiny white head. Aroma has gentle funk, crisp apple skins, and a touch of wood. Flavour is bone dry, with a nice dry oak, wood, some brett, and crisp apple skins. Nice dry oakiness on the finish. Good stuff.

Bottle pour at Barrel Fest 2025. Pours murky dull blonde with minimal head. Musty apple skins and elastic bands on the nose. Flavour is yeasty, has some apples, gentle tannins. Low carbonation. It's not bad.
