naturally sparkling cider, wild yeast fermentation, single varietal, grown on our farm.

Made with Virginia Crab apples grown on our farm. Fermented with wild yeast in neutral oak barrels. Secondary fermentation in bottle, hand disgorged. Dry, tart and tannic. 25 cases made.

Dull amber, frothy pour. Why so frothy?
Twang, lots of skin, rose water, bold cherry juice - crab apple nose.
Tasting notes are on point, it does taste a lot like grilled pineapple with woody notes. Bit of veggie & oxidation that becomes more prominent & distracting as it warms.
A bit boozy & it pushes the faults more than the initial twangy flavor.
