Saison is one of the most underappreciated styles and we aim to change that stigma. The French Saison strain is well known for its dry finish with big pineapple esters and pepper phenols. To emphasise these notes, the natural thought is to incorporate the real thing. We turned our mind on autopilot and did just that. Autonomic Mind is our natural progression to spicing up a solid base saison with its natural counterparts. The pineapple hits hard, finishing dry and spicy, with a nuanced tingly numbness from the peppercorns.

Pale, bright, no head. Light phenols, plastic, not much of the piña, or the peppercorn. Just all round too timid.

On tap at Irrational, pours a clear pale golden yellow with a small white head. Aroma has estery notes upfront, along with gentle peppercorns and a touch of the pineapple. Flavour is rather faded, with very gentle peppercorn and light rustic character. Pretty dull expression, with no pineapple and improperly expressed saison yeast. Not too impressive.

On tap at the brewery. Pours clear blonde with a white head. Gentle saison yeast on the nose. Flavour has a flat saison yeast character, grainy malts. Yeast expression is weak and the adjuncts aren't coming through at all. Not great.
