This tart Saison was brewed with heirloom variety rustic grains from Anson Mills, a company who is known for preserving heirloom varieties and providing access to some of the most flavorful cereals for chefs. We chose to brew with Huguenot Black Oats, Black Rye, and Carolina Gold Rice Middlins for an added twist. The heirloom grains provided a nice rustic, tart backbone for our Brettanomyces mixed culture fermentation and extended aging.

On the sour side for a saison, but I don't mind, that's how I like them best. Good dose of funky goat, but even more fruityness. Light, crisp, tart and fresh. Apple, lemon juice, hay. Lovely.

Bottle. Pours a pale yellow color with a small white head. Has a fruity sour tart citrus aroma. Fruity sour tart citrus flavor. Has a fruity sour tart citrus finish.

Flaska från Beergium. Crooked Stave-provning med Vignale och Samuel214. Blek, ljusgul med högt vitt skum. Friskt syrlig i doften med citrus, stall, lätt pissoartablett, krusbär och vita vinbär. Lättare, torr kropp. Riktigt frisk och krispig med snällt syrliga toner av citrus, vete, citrusvita, gröna äpplen och päron. Rena lena smaker. Riktigt fin funkig och syrlig saison. Mycket gott.

(Keg at Sori Taproom, 20171031) The beer poured golden and clear. Its head was medium sized and white. Aroma had fruitiness, tartness and sweetness. Palate was medium bodied with medium. Flavours were fruitiness, tartness, sweetness and bitterness. Aftertaste was tart and bitter. A rather tart and still drinkable brew. Well done.

Draught @ Sori Taproom, Helsinki. Pours light yellow with a small head. Aroma of tart fruits, citrus, lemon and bretta. Taste is funky, oaky and citrusy with some bretta, wood, lemon and rustic maltiness. Finish is rustic, grainy and citrusy with some yeast, bretta and spices. Okay, light bodied funky saison.

Draught @ Sori Taproom. Poured light golden color with a thin white head. Aroma has honey sweetness, floral notes, hay. Flavor has honey notes, mild funk. Good drinkability. Nice.
