The Meerts Tilquin series was made by fermenting fruit that had already been used once. Mourvèdre grapes were fermented again for a period of 4 months in a blend of 80% 1 year old Meerts and 20% of a blend of different 2 year old lambics. Meerts (or March Beer) is a low strength lambic, which was originally produced with the weaker wort obtained from the rinsing of the grains. Unfiltered and unpasteurized, they are refermented in the bottle.

One of the second generation Tilquin Meerts lambics, reprising the Mourvèdre grapes used in the 'full' Mouvèdre grape lambic, a tannin-rich 'cépage' of Catalan origin. Very moussey, audibly fizzing, vaguely rosy-tinged off-white, diminishing head eventually reduced to a thin ring of foam which completely dissolves in the end; lightly hazed warm deep orange-golden robe with salmon-pinkish nuances and a whirlwind of tiny-bubbled sparkling rushing throughout. Aroma of dried grape skins and pomace of Mourvèdre grapes rather than actual fresh grapes, grape seed oil, wet leather, wrinkled old apples, dry oak wood, horse stable, dried autumn leaves, unripe plum, desiccated wild berries, dry haystack, old dried grapefruit zest, dry farmland, rosehip tea. Lively onset, tart in a lactic and fruity way, juicier than expected perhaps - sour grapes alright, but also crabapple, unripe apricot and green plum, slightly puckering further on but nothing vinegary or otherwise unpleasant, vividly carbonated in a very fine-bubbled way, adding a lot of minerality through a dry-lactic and grape skin-fruity, bread-crusty, eventually woody and tannic core. There is a certain dry rosé wine flavour at the back enhancing the more basic and 'pure' grape skin aspect - adding important complexity, as does a colourful Brett effect of wet leather, old dried citrus zest, damp autumn leaves and dry farmland. Ends dry and tannic but elegantly so, which enough grape juiciness for balance. More 'dried grape'-like than the other grape-flavoured Meerts editions so far, but quite aromatic, a bit herbal even, and still managing to offer 'winey' effects deeply penetrating the light-bodied character of the lambics in which they are woven. Fascinatingly versatile in that sense and therefore entertaining throughout the whole 37.5 cl - in itself again an impressive achievement. Nearly all the Meerts variants Tilquin has produced so far have been delicate little gems and this one is no different.
