Clover (2005-2014) was an uncomplicated yet complex grey cat with whom we shared an all-too-brief moment and space. ⁣In her honor, we mindfully blended our favorite barrels of Ann, Art, and Flora, each of which had been aged for between 16 and 27 months—guided by her lingering spirit towards a beer of elegance, grace, and patience.⁣ As our Clover often would, this beer took its own path and its own time to become what it is now: an effervescent, refined reflection of both our melancholy for her departure and, most importantly, our joy in traveling with her for a while.

$30 for a 15cl pour, nice. Bottle pour at Hill Farmstead, pours a clear golden with a small white head. Aroma has plenty of unusual farmhouse notes, old leather, old furniture, and fermented out honey. Flavour is somehow different, with totally fermented out honey, old leather, tart vinous notes, and oak. Nice blend, maybe not as refined as their top products. I’m failing to see the justification on the price tag here, even if it is excellent.

750mL bottle at the brewery, May 8, 2026.
Powerful, rich, malty nose with wine barrel helping to balance and creating a prominent Semillon-like character in the nose. Clear, bright, powerful. Wonderful.
Rich and malty again, though never too malty. Mildly tart, but properly balanced with no acid buildup. Barrel gives plentiful white wine character and the elegance and grace are here, despite its powerful richness. Lovely stuff, of course, and still has many, many more great years to come.
