Blend of Barrel-Aged Imperial Stout and Sour Red Ales
Bottle Release 3/29/25 - $18/500mL Bottle
When blending, we identify barrels that are delicious, but that don’t fit with the rest of a blend. When we compile enough of these we sit down to blend, talk, and try to put order to the chaos. This re-blending of #2 includes a sour red ale aged in Calvados a barrel for 8 months, an Imperial stout aged in a bourbon barrel for 12 months, and a strong sour red that spent 42 months in a wine barrel. The sweetness from the stout balances the assertive acidity from the reds. Roast and red fruit mingle into a... sour stout or is it a Flanders black?

500 ml bottle. Aroma has notes of wood, berries, funk, vanilla, chocolate, raisin, amazingness. Pours opaque dark brown with a one finger beige head with good retention. Taste is moderately to highly sour (8/10), moderately bitter, and savory with flavors of dark fruit, wine barrel, bourbon barrel, and funk. Delicious and complex. What an interesting beer. This has completely changed my views on sour stouts/porters. This might be the first good one I’ve had.
