Our brewer Jimmy has spent many nights cruising the bars and taprooms of Japan, a place where he finds inspiration in their passion, hospitality and dedication to quality beer. This meant that it only made sense that when Eugene from Totopia Brewery in Nagoya, Japan was over earlier this summer for These Hills festival, we quickly bundled him into a van drove up to Manchester to put together a big juicy DDH IPA absolutely brimming with bucketfuls of hops, something both our breweries, and plenty of you love.
We’ve left no shortage of hops in this DDH IPA with a double dose of Chinook, Centennial, Enigma, Citra, Simcoe and Ariana, throwing in some extra Centennial in the boil and Chinook in the whirlpool for an extra layer of spice and peppery herbaceousness to balance notes of peach ring sweets, lime and white grape skin. A perfectly balanced bitterness that makes you want to go back for more. Kanpai, tomodachi!

Pours murky pale yellow gold with a thin white cap. Peach, little white grape, fresh citrus notes, malt, wisp of yeast. Leads to quite a fruity fresh finish with some bitter pine hop kicking in with a little booze burn. Decent.

Can at home picked up from 73 Enid Street. A clouded golden orange coloured pour with a rocky sticky off white head. Aroma is creamy wheat, bark , dirty pine, c hops, dirty orange. Flavour is composed of bitter orange rind, pine, citrus oils, bark, loose wheat, bitter citrus, breakfast orange, juicy bruised orange, dirty piney hop,

Nose is orange zest, grass, mandarin, papaya, ripe tropicana.
Taste comprises orange pith, raw pineapple, grass, pine needle, melon, guava.
Medium bodied, fine carbonation, semi drying close spiked with juicy come light danko hop bitterness.
Tidy IPA.

Can. Hazy orange gold beer, small but tidy pale cream colour head. Light palate, mildly dry, good fine minerally carbonation. Light bodied pale malts provide a modest sweet counterpoint to the hops. Chinook immediately obvious, slightly boxy bitter with a touch of pith and some slightly oniony skunk. The other old warhorses bring juicy citrus, orange and mandarin. Enigma and Ariana lost in the storm to me. Some mild hop spice on the crisp finish. An entertaining old school IPA because of the Chinook dominance. Would have been nice to get more of the rarely seen Ariana but, a decent brew.

Appearance- cloudy yellow, with a clingy foamy white head. Aroma- pineapple, grapefruit, tangerine, hoppy fruit, melon, hop resin. Taste- citrus fruit, mango, papaya, juicy fruit, orange, apple and grape hints, hop bites, piney hops, quite a dry finish.

440ml can. Murky yellow, white head. Aroma of papaya, mandarin, peach, and some rather earthy notes. Taste pretty much the same, juicy papaya, peach, mandarin, leading to some peppery hop spice and a very very pithy finish, almost astringent which lets it down. Medium bodied, very smooth. Nice but not one of their best.
