American cider is steeped in time honored traditions. At Hawk Knob, we believe in keeping those traditional alive. We’ve made this still, dry, wild fermented cider from 100% Greenbrier Valley-grown heirloom and heritage apples and aged it to perfection for ten months in oak bourbon barrels. It’s the same process craft cider makers have used for centuries. Enjoy the taste of tradition.

Bottle pour at The Dabney, pours a pale, tepid orange, no head. Smells like a bourbon cocktail, apples, oranges, Manhattan. Booze and sweetness on the flavor, caramel, apple pie, spice. Tart on the finish. Funky too. 7 3 7 4 14

$8.99 bottle from the middle Kroger in Charlottesville. MaryAnn said she just got these in after they came to do a tasting, so not sure if the other Krogers in town will have them. Pours pale golden, slight hazy, some carbonation. Aroma is slightly sweet apple, dust, earth, barrel. Flavor is tart apple, funk, bourbon, earth, wood. Good for the most part... the bourbon flavor is perhaps a little too strong in the light cider.

Bottle. Light barnyard, lemon, apple, and hay aroma. Golden yellow. Dry, lightly funky apple, and mildly bitter hay flavor. Okay body. Not as much funkiness or sourness as I would expected from wild fermentation.
