It’s a rare treat to discover bulbous pearls of pear when foraging for apples; but when we do, we jump for joy! This perry was barrel-aged for 2 years and then bottled with a dose of apple juice from our 2020 forage crop for a gentle secondary fermentation in bottle. The result is a delicious oxidized wine expressing a refreshing interplay between volatile acidity and sweet appley-pear notes. 2020 did not lead us to any pear pearls, but we have high hopes for 2021.

750mL bottle pour at the brewery, 10/4/25.
Lightly cloudy, rusty-marigold. Light carbonation apparent.
Some initial bright, pungent pear is quickly joined by big oak and big acetic...
Sadly this one seems a bit too given to the acetic. Not that it's ruined or anything; far from it. But definitely stronger acetic presence than I'd want or that I'd assume they intended. Pear is interesting, still lightly juicy, though there's tons of dry oak character and tannin. Rich, chewy, soft, luxurious, but very acidic.
