In the analog age of music, artists recorded take after take, experimenting with new sounds until a great record emerged. Our Alternate Takes series offers a peek into our iterative and creative R&D process, where each batch is celebrated as its own off-centered hit.

Alternate Takes #2 began with Raison D’Etre being end-fermented in a tank with a Belgian Abbey yeast. Then we transferred it to single-use red wine barrels, where we added Syrah grape must and brettanomyces. The result is a wild sour ale with a deep, dark and complex flavor.

Sample at GABF 10/08/2016, thanks to my sis for assistance with note-taking. Hazy ruddy amber color with a medium thin off-white head that diminishes gradually. Strings of lacing. Funky yeast, fruit and malt aroma. Full-bodied with flavors of brett yeast, vinous oak, tart fruit and malt. The finish is mildly funky with a red wine aftertaste. Pretty good overall.

Draft at Churchkey. Cloudy maroon color, off white ice cream cone head. Aroma of tannins and port wine. Taste has softly sour red wine, plums. Very tasty.

Growler from Joe Canal’s in Lawrenceville, NJ. Hazy copper with a small firm beige head. Sharp bready, Brett nose. First sip brings musty, dryish tart fruit and funk. A lot at play here. Back of the barn, stone fruit, grape skins and boozy notes. Complex and wondrous. Fruity and bready, yet not like breadfruit. A real cross between sour ale and earthy wine. A paradox of sorts. This drinks easy, but beware that at 10% ABV, it will sneak up on you and slap you silly. Not the best of Dogfish Head, but a pleasant little gem that will leave you wondering how they ever thought to create this.

Lots of citrus and some rind. Light guava. Hazy brown pour with great head and lacing. Tangy finish. Not a lot to this. Tap at Churchkey.

A reddish copper ale with a thin off white head. In aroma, sweet fruity caramel malt with light candy sugar, light curacao, light butterscotch, alcohol warmth, very nice and smooth. In mouth, a nice caramel malt with loads of dark fruits, plums, licorice touches, light buttery notes, grapeskin, alcohol warmth, very nice and smooth. On tap at Gnarly Barley.

On tap at Petrol Station. Pours a cloudy copper with medium off white head that lasts. The aroma is yeast, bubblegum, pure sugar. Medium body, yeast, fruity malt, boozy finish, very good.
