This keeved cider rests on the shoulders of older trees (at least 30 years) in grazed or mown Herefordshire orchards. Tom trusts the fruit is the best for keeving, which is a technique to produce slower fermenting and potentially naturally sweet ciders. The varietals are mixed cider apples but Sheep's Nose, Yarlington Mill, Michelin, Dabinett are key.
Rich in apple sugars and a tannic backbone, with just enough acidity, to keep this very fruity tasting. Full mouthfeel but wonderfully clean and moreish.

Moderately hazed golden copper topped with an off white cap that retains as a swirl.
Nose is bitter sweet apple, herb, straw, barnyard light, apple skins.
Taste comprises herb, apple core, tannins, light sugars, caramel, apple pie.
Medium bodied, fine carbonation, drying close.
Solid.

Panda at home thanks to Ed Danlo. A translucent golden orange coloured pour with a loose white head. Aroma is semi sweet, floral apple, apple blossom, white sugars, golden apple, orange rind, nice. Flavour is composed of semi sweet, floral apple, floury apples, juicy apple. Palate is semi sweet, rounded, wheat, moderate carbonation. Really nice.

750ml bottle from Fram Ferment. Orange golden colour, thin foamy white head and aroma of apple, caramel, peach, funk. Taste is sweet, appley, caramel, stone fruity, orchardy, funky, with balanced acidity and tannin. Medium bodied, light carbonation, lingering peachy sweet & drying tannic finish. Nicely drinkable.
