Any brewer you care to meet will invariably tell you that they are powered by coffee, and we're no different here. When we got together with Artista Perfetto instead of going down our expected coffee imperial stout route, we wanted to try something different using the unique bright, fruity and floral flavours that come from specialty roasted coffee.
For this beer we swapped out our usual hops in the dry hopping process and replaced them with Cascara. Cascara is the dried out skins of the coffee cherry, a by-product of coffee processing that can be used in brewing fruity, sweet, tea-like drinks with flavour notes of cherry, hibiscus and chocolate. This allowed the liquid to really absorb all the natural flavourings from the skins creating a super soft berry and peach flavour that helps accentuate the Mosaic and Cashmere hops we’ve thrown in alongside another whack of peach just to amp it all up. Pâle, léger dorée, col épais crémeux blanc;
Arôme sur une approche pouvant presque aller sur le gruit si cela s'était limité au cascara - j'avais déjà essayé cela en infusion après un achat chez un torréfacteur de Barcelone. Notes tropicales, fruits à noyaux, pêche assez dominante - le tout restant plus l'affaire des houblons.
Palais est de suite intéressant avec cet usage assez unique de cascara de café venant presque en substitut du houblon - ces derniers sont quand même présents avec le Cashmere et Mosaic.
Fruité délicat oscillant sur l'abricot, pêche, orange givrée et un léger effet de thé infusé.

Can at home, from 73 Enid Street, 31/10/2025.
Murky orange topped with an off white cap that thins to a swirl.
Nose is peach, orange zest, herb, mandarin.
Taste comprises orange peel, light coffee grinds, herb, melon, papaya.
Medium bodied, fine carbonation, semi drying close spliced with earthy.come lightly resinous hop bitterness.
Not bad ... interesting pale.

Appearance is cloudy amber, with a foamy 1-2 finger head. Aroma is peach, orange, berry fruit, hops. Taste is orange, peach, peppery hops, berry fruit, floral hoppy hints.
