This single variety cider was spontaneously fermented before being transferred to a 300L Bordeaux barrel made from American oak where we introduced our house culture. It was aged for 9 months before packaging with sugar and champagne yeast. Yarlington Mill brings richness and dried fruits against a background of structured, vinous tannins and subtle vanilla from the barrel. It finishes with honey dryness and a hint of funky caramel.

Panda at home many thanks to Ed Danlo. A translucent bright golden orange coloured pour with a fading white head. Aroma is super dry, funk dry white wine, barrel funk, dry wooden tannin, lemon rind, green notes. Flavour is composed of super dry, tannin, pithy, woody tannin, bark, spicy finish. medium dry funk, vinous funk. Palate is super dry lightly prickly, moderarate carbonation. Good.

750ml bottle. Orangey gold colour, foamy white head that dissipates away and aroma of apple, fruit, funk, caramel, vanilla. Taste is sweet & tart, tangy, appley, juicy stone fruit, citrus, with wood barrel notes, oak, wine, funk, vanilla and drying bittersweet tannin. Medium bodied, light soft carbonation, dry woody oaky tannic fiinsh. Nicely drinkable.
