A wild farmhouse blend, composed of three different years of oak barrel and oak tank matured Petit Desay batches. This presents expressive fruit character from the fermentation, a restrained acidity, and balancing oak and funk character.

Bottle from Toby. Dry tart puckering from the get-go. Hazy amber body. Tart aroma, lemon. Taste adds some yeast, but still focused on the gentle tartness. Lemonade without sugar comes to mind. Tartness lingers, licking my gums.
