We filled a handful of local Chardonnay “barls” with our Mowkeef Saison, then added fresh raspberries along with our proprietary “wild” culture and allowed the marriage of flavors to begin. After 14 months and dozens of barrel tastings, we found what we were looking for: soft aromas of raspberry and dried fruits, a refreshingly tart finish, and a “rosy” glow.

(Draught at Beer Temple, Amsterdam, 29 Feb 2020) Reddish amber colour with frothy, off-white head. Fruity, sourish nose with raspberries, oak wood and white wine. Fruity, tart taste with notes of raspberries, spices, yeast, oak wood and a vinous acidity in a finish with low bitterness. Medium body, with a touch of sweetness. A bit different, but really fresh and tasty with a good oaky tartness. Very nice.

On tap at bier thirty. Pours out a orangeish amber topped with a small head. Nose is funk tart raspberries along with a nice barrel touch. Taste is more of the tart berries and a touch of sweetness.

This is my first Anderson Valley beer, and first true wild, not counting those tamed but tasty lambics, so I was looking forward to this. Beautiful nose of tart raspberries and a little wheat. The taste was a fairly low sourness with perfumes and raspberry, but sadly a rather unwelcome, but slight funky-sock aftertaste to pull down the overall. Mid carbonization. A good beer that makes me want to try more wilds. Thanks.

Tap at Capitol Beer in Sacramento, CA. Pours orange/red/amber with a creamy off-white head. Mildly tart sour berry aroma. Med body. Flavor is tart, citric, fruit with maybe a touch of metallic. Gets woodily astringent. Develops a touch of floral? Astringency increases. Finishes tart/sour, arguably berry fruit. Pretty nice!
