Black Stag is our German Doppelbock pouring a dark amber color with a crown of coffee-colored foam. Using Pilsner, chocolate, and a host of Munich malts, complex notes of sweet dark fruits, schwarzbrot bread, and a hint of caramel-drizzled hot cocoa unfold over the palate. Despite its rich, full-bodied profile, it finishes dry and pairs perfectly with a celebratory feast, whether served with the main course or dessert.

Canned Winter '25-'26, drunk 12/4/25, as pictured.
Smells a bit sugary, initially. Cocoa, brown sugar, table sugar....Fudgey even. Not getting much in the way of a bock. Almost no acidity/melanoidin, no lager yeast, not crisp on the end. Just very stout-like.
Ok, it's quite a bit more bock-like in the flavor, thankfully. There's good acidity that doesn't come through in the nose, giving a dry raisin-prune character with a touch of licorice and vanilla. Still some brown sugar but it's not too sweet. Quite malty and pretty nicely attenuated with no alcohol noted.

16oz cam pours a cola brown, Grey head that faded fast. Nose has malt, raisin, date, carob, booze. Flavor has big malt and dark dried fruits, raisins and plums, rum. Dark malts are true to style. Full, boozy, long, slightly astringent finish. Well made. Bang on.

Pours a dark brown, verging on black, with minimal head. Aroma is roasted grain, chocolate, bread, some grass. Flavors follow, along with some dark fruit and a surprisingly sweet finish. Smooth mouthfeel.
