After fermentation, the beer was transferred to wine barrels that housed a healthy culture of Brettanomyces Bruxellensis.
As the beer aged it took on more traditional Brett characteristics. A few weeks before packaging we added a blend of hops at a rate of 5 pounds per wooden barrel. We chose Nelson Sauvin hops from New Zealand and Hallertau Blanc hops from Germany. Both of these varietals impart complex fruit flavors and aromas as well as earthy undertones: pineapple, white grapes, gooseberry and black pepper.
The live Brett in this beer, as well as generous amounts of unique and flavorful hops, make this a great beer to drink fresh. It may also be cellared to develop for years to come.

11.2 oz bottle courtesy of JohnGalt1, vintage 2015. Light golden pour with a small bubbly head. Aroma is brett tartness, fruity, floral. Taste is tart, mildly sweet, fruity and a healthy dose of brett funk.

Bottle at DRBT 10. Pours a hazy gold with medium white head that lasts. The aroma is grape must, oak, yeast, funk, brett. Slick body, oak, brett, citrus, dry finish, very good.

Bottle, thanks for sharing! Pours a hazy peachy gold with a white head that dissipates to the edges quickly. Aroma has a great Brett note with grass, light citrus and s bit of light grains. Flavor has a great funky Brett note with earthy grains and some light flora and a hint of earthy fruit

Clear light golden with a small white head, some lacing. Aroma of brett, fruity and wheat. Flavors are fruity, peaches, brett and oak

From a 12 oz bottle. Pours a hazy gold with an off white head. Oaky, floral nose. Flavors of dank straw with some vanilla. Tart finish.

This pours a clear gold with what started out as a 2 finger head of foam(vigorous pour); in quick smart time, the foam dissipated and now there’s just a ring around the glass.
Complex smell here. dry white wine with that Saison aroma mixed with definitely noticeable Brett. Spicy with cloves and white pepper, hints of oak. Egads.
Wine like flavour up front, dry and tart from the wild yeast, fruity..perhaps apricots with grapes, white pepper whilst the clove I smelled seem to be buried by the other flavours. Ooomp, there it is. I’m getting some oak notes as well. No complaints aboot any alcohol and why should I? Only 6.2% abv. So dry, so drinkable.
A really slick and wet mouthfeel. The carbonation is on the very low side but I don’t want for more.
I was super impressed with their American Sour; this impresses me almost to the same level. Marvelous.

Draft at Northern Lights courtesy of Chris, thanks! Hazy to cloudy golden yellow color, fluffy white head. Nice white wine aroma with light sweat and subtle dust. Taste has tannins up front, more white wine, vanilla, dusty straw. Delicious.

On tap at bier thirty pours out golden topped with a sand head. Nose is nice floral hops big brett sweetness spice and some barnyard funk. Taste is more of the floral hops some tropical fruit sweetness brett funk barrel and a nice end.
