2023 Vintage. Ancestral Method Cider
A blend of two of our favourite varieties, both originating in Somerset: the famous bittersweet Dabinett (45%) and the very late picking bittersharp Porter’s Perfection (55%). Blended together straight after pressing these co-fermented in a small tank before bottling in late winter, allowing the fermentation to finish in bottle – Ancestral method, sometimes referred to as pet nat.
Drink lightly chilled with roast meats or cheese dishes. 750ml. 7.4%.

750ml bottle from Wilding Cider. Sparkling orangey gold colour, short-lived fizzy white foam head and aroma of apple, fruit, funk. Taste is tangy, tart, fruity, appley, with some funk, acidity and tannin. Medium bodied, spritzy carbonation dry fruity acidic & tannic finish. Nicely drinkable.
