Look, we’re pretty much on record for our love of Sabro here at Polly’s. From that first meeting back in early 2020 when we brewed the cult classic Oh My, all the way to the present day, there’s just something about this hop that people either love or hate that has us completely enchanted by its ultra-unique quirks and idiosyncrasies.
It always felt as though a version of Oh My should have been a Sabro pairing with Simcoe but for whatever reason these two cornerstone hops have never crossed paths on our brewing journey, until now that is.
Wanting to let our brewers play with their recipes a little more, we figured why not make that stonefruity, sticky, pina colada beer, but with two different versions of Simcoe for a little flourish? A hot side T-90 addition brings the underlying bitterness, whilst cold side Sabro paired with Cryo Simcoe makes this beer absolutely burst with bright lime, peach, pineapple, and creamy coconut flavours.

Can. Hazy yellowish gold beer, small bubbly pale cream colour head. Airy palate, a very mild dryness, good fine minerally carbonation. Light smooth pale malts, a good creamy sweetness. Sabro punches hard from the get go with a bold creamy coconut. Mild pineapple peeps from behind the skirts of mild Simcoe citrus. Cooling pine runs throughout and there is a modest hop spice on the close. A coconut IPA with no adjuncts I genuinely feel sorry for people who don't like Sabro. I presume they don't like Dolcita or Sorachi either. Oh well, would be boring if we all had the same taste.

Lots of sabro induced pineapple to the fore, some passionfruit, notes of pine needles coming in, grapefruit and lemon wash, sweetish malty backing with a bitter edged hoppy finish. Tasty and refreshing.
