Salsus is our interpretation of a rustic Gose. It is triple decocted & brewed using wheat, spelt & barley malt. We use a touch of French Grey Sea Salt & spice it with coriander & pink peppercorns. Unboiled, the beer then sits in the coolship overnight. It is then layered in oak barrels for at least 3 months. No two blends will taste the same! It has been aruged that Gose was historically spontaneously fermented similar to the lambics of Belgium. Honoring this interpretation, we blend in some of our spontaneously fermented ale into Salsus. Once a blend is gone, it is gone forever.

Keg at Brasserie V, 8/14/16. Hazy orange, thin fizzy head, poor retention. Aroma of lactic funk, citrus, wheat. The taste is lemonade, pepper, lactic acid, pale malt. Medium bodied, strong lingering tartness. Needs more salt.

Bottle thanks to Nathan. Pours a cloudy orange gold with small off white head that diminishes to nothing. The aroma is cheese, funk, salt, dough, wheat. Thin mouth, strong lemon zest, stone fruit, funky, nice tartness, really enjoyed this.

Bottle thanks to Caleb! Pours fairly hazy golden with a small off-white head and good lacing. Aroma, is lactic, ocean air, pepper, funky yeast, hints of cheese. Flavor is aggresively sour, fairly cheesy and lactic, funkyness present and accounted for. Salt take a backdrop but is still present. Lemon. Medium body.

Beautiful bottle. Pours a cloudy orange color with a medium white head. A big funky lemon zest nose. The flavor is big sharp sour notes, oak, vanilla. Quite good.

Draft at Hopsscotch, 2/28. Rust colored poor with a thick beige head. Sour aroma with fruit, vinegar. Flavor is similar with a good bit of salt as well. Quite aggressively sour. A bit vinous as well. Pretty good stuff, but you'd probably get some serious heartburn from having more than one.

Draft at Paradiso Dupont. Cloudy yellow color. Aroma of mixed citrus. Taste is tart and earthy lemon candy, sour and dry finish. Very tart, straightforward.

Hazy blonde-golden beer is well-carbonated and has a medium-sized white head that fades to cover.
Aroma shows light lactic character, lots of restraint on the adjuncts and a bit of breadiness from the malts. There’s a soft coriander character that adds a freshness to the beer, though it’s more toned down, even, than the Gosatequin. Notes of vanilla, caramelized honey and light peppers on the finish all seem to-style. Not as funky as some goses can be, but that’s perfectly fine. No alcohol/flaws.
The flavor is lightly to moderately sweet, showing bready malts, light caramel sweetness and hints of vanilla. A touch of saltiness mixes with light lactic acidity on the finish, but this isn’t a powerfully acidic beer. The strongly malty, or perhaps more correctly, dextrinous character is here, just like in Exilior, no doubt a product of the mashing technique. It gives the beer a ton of body and texture without over-sweetening things. Lots of similarities to both Exilior and Gosatequin, but still manages to be its own beer. Another wonderful example from OEC, though maybe could use a bit less body to add some more drinkability to it.
