Organic Wild Beer refermented on Golden Coe Plums, 4.5% alc./vol.
This is the first fully wild-fermented beer that we are releasing from our barrel store. It was filled into two wooden casks in early April 2024, left to spontaneously ferment and then condition for 18 months. We moved it on to fifty kilos of delicious organic Golden Coe plums in September 2025 and then bottled it without any filtration or additions.
The beer is tart and vibrant, with nicely balanced, earthy bitterness. A little jamminess from the plums rounds it off, giving it a nice depth for such a light beer. It pours bright pinky-orange, with a little spritz. Best drunk cold.

-tinged pale gold with a thin white head. Aromas of greengage and yellow plum. Funky and woody. Taste is dry, woody, cidery. Dry finish.

Appearance - cloudy orange.
Nose - greengage for sure, also damson, somewhere in the middle.
Taste - fresh green and amber plums again, with dry wood at the back.
Palate - light bodied, zesty and then sour.
Overall - good.

Bottle direct from Futtle..it pours deep hazy oily golden with a bubbly white head which lasts to the last sip. The aroma is ripe, tangy, musty, fermenting plums, prune, sherbet, jammy, fig roll, vinous, red wine and Victorian sponge cake. The taste is initially it is smooth and fruity, juicy, spritzy, puckering, sherbet, tangfastics, bright plum character, slightly lactic, damp oak, muted acidic, dull funk, jammy fruits, tangy berry, fig, touch of redcurrant and some floral accents with a dry, puckering fruit finish. Light to average body and soft, massaging carbonation. Lovely balance to it. Quite vibrant and classy. Quaffable.
