A custom blend of the beers of Bear Republic, Cuvee de Bubba is allowed to undergo a secondary fermentation in oak barrels using only the wild microflora and fauna native to the Alexander Valley in Sonoma County. The Cuvee has a bouquet of stone fruits and a boasts a complex flavor profile of malt backed by a hint of tobacco and finishes with cherry pie sourness.

4 oz draft pour at Churchkey. Poured a murky ruby-brown color with a small off-white head. Aroma ws notes of sweet fruits, sour cherries, wine notes, some vanilla woody notes. Flavor was not as funky, but retains a lot of that woody vanilla barrel character. Light tartness. Pretty tasty.

6 oz draft pour at Snallygaster 2014 shared by someone. Clear brown with light off-white head. Aromas of wine, cheese, funk, light floral notes. Tastes of red wine, cheese, funk, dark fruit, some vinegar. Medium body with a dry finish.

Sample at Rattle N Hum. This beer is a dark orange color with a medium thick off-white head that recedes gradually. Small patches of lacing on the glass. Fruity aroma with notes of malt and yeast. Medium body with flavors of tart fruit, peppery yeast and malt. The finish is fruity up front with an earthy yeast aftertaste. Decent overall.

From bottle at Jupiter during Sour Sunday 2014. Clear amber with a small head. Aroma of cherries, oak, funk and red wine. Not a bad one but a bit on the thin side. Fairly sour finish.

On tap at Bear Republic, pours a hazy amber orange with a small beige head. Aroma is very complex, with loads of wild yeast, oak barrels, and some lightly tart fruits. Flavour is exceedingly complex, full of an amazing blend of wild yeast, followed by oak wood barrels, and very subtle lightly tart fruitiness. The wild yeasts create an amazingly complex and elegant flavour profile. Highly drinkable, not revealing any of the 9%. Awesome stuff.

Tap. Pours clear reddish amber with a small off-white head that leaves decent lacing. Aroma is tart cherry, oak, funk, and red wine. Flavors are about the same, plus some lemon and tobacco notes. Lightly sweet, medium tart with a dry finish and a light metallic aftertaste. Medium body. Not bad, but lacking the depth of the best sours.

Sampled from the tap at FOBAB 2012. Pours a clear light amber with a near white head that dissipates to the edges. Aroma has sour pie cherries with some grapefruit and a bit of acid underlying. Flavor has similar sour cherry note with bitter grapefruit a hint of sweet grain and a dry finish.
