Pineapples + Spices + Wild Yeasts
Tepache is a traditional Mexican soft drink made from spontaneously fermented pineapples flavoured with spices. Using this inspiration for our flavours we brought several Mexican ingredients to the brewhouse: Masa Canina; Pineapples; Demerara sugar; cinnamon and star anise.
Tepache is a perfect balance of funky brett with a tart and zesty sourness and the blend of the sweet fruit and dry spice character. It is paired beautifully with Njdula tacos – where spicy sausage compliments the spices in the beer, refried beans are cut by the brisk acidity, whilst lime provides a contrast to the earthy, fermented pineapple character.

Tap. Yellowish pour, white head. Spices, some cinnamon, low pineapple. Medium spicy-sweetish finish, light body, average carbonation. Not my cup of tea.

750ml bottle from JB's Brewhouse in Jersey. Pours caramel with a tiny white head. Aromas & tastes of pineapple, lemon, cinnamon & spice. Moderate body. Tart finish.

Bottle from Beerwulf. Aroma is a bit lactic with pineapple, spicy cinnamon, lemon, fruits, dough, cake spices, tart berries. Flavour is tart with a medium puckering sourness and a light sweetness. Body is medium. Spicy and tart with fruits, good sourness, but doesn't make me want to revisit.

Bottled (from Alko Prisma, Vaasa). Golden colour with a small white head. Aroma is fruity, some tart wood and mild acidity to it. Flavour is tart wood, some floral and fruity tones along with mild herbal tones. Not overly sour or tart.

Clear, rich amber colour with a thick white head though that soon fizzles down. Smells sharp and fruity with a spiciness to it as well. Flavour is a really tart hit of pineapple up front, fresh and crisp, with some sugar and spices (cinnamon most obviously, a little of the clove too) there giving it a really interesting balance. Not easy to get flavour from a crisp beer garden beer and a warm pudding into the one beer but this is spot on.
