This single variety cider was spontaneously fermented before being transferred to a 300L Bordeaux barrel made from American oak where we introduced our house culture. It was aged for 9 months before packaging with sugar and champagne yeast.
Chisel Jersey brings tropical fruit and acidity with big, bold tannic structure. Bold, vibrant and juicy with refreshing crisp dryness, it finishes with pineapple and straw funk.

750ml bottle. Orangey gold colour, white foam head that dissipates to a thin rim and aroma of apple, wood barrel, acetic funk. Taste is tangy, tart, appley, fruity, with wine barrel, woody, farmyard funky, citric notes, and drying tannin. Medium bodied, light carbonation, drying tannic finish. Nicely drinkable.
