Collaboration #1 is a blend of York, Stayman and Jonathan apples. The blend was then assembled inside ANXO’s massive 25 hectolitre (or 660 gallon) cask which came from a Barolo winery in Italy. After four months of aging, Collaboration #1 has taken on a faint Barolo character that makes for an exquisite nose. On the palate Collaboration #1 is very dry, highly acidic, and reminiscent of Basque cider. This incarnation will be lightly carbonated.

750ml bottle pours a murky yellow with basically no head. Nose has a lot happening, apples, green grapes, lemon, mild cheese cloth, a little candlewax. Flavor is very lemony, tart green apples and green apple skins, green grapes, some passion fruit, a little guava too. Finishes lightly tart, lightly acetic. Pretty nice.

Tap @ ANXO, Washington, DC. Pours nearly clear pale straw with no head. Muffled aroma of basement and crisp apples, with notes of fermentation. Dry, lingering flavour of crisp apples, increasing in acidity and ending on a long, vinous note wit dusty touches. Rough and ready. Very decent.

Draft at Colony Club. Hazy yellow color, edge bubbles. Aroma has light tannins, subtle floral citrus. Taste starts sweetish but continues with a tart edge. Very drinkable. Wishing Sam & Rachel the best of luck with their new venture!
