Origins Of Darkness is our ode to, and collab with, one of the local craft breweries that got us excited about craft beer in Ontario, Collective Arts Brewing! After years of enjoying their Origin Of Darkness series, we are honoured to present you with our version. It's an Imperial Stout that's been aged an average of 12 months in a voluptuous blend of Barton 1792 bourbon, Russell Reserve single bourbon barrel and Willett bourbon barrels then conditioned on rare Costa Rican coffee roasted by our friend Joe from @MorningRoast. The aroma is roasty and coffee-forward. The flavour is lush with rich chocolate followed by vanilla-laced oak and bourbon.

Poured black in color.
Coffee, malts, roastedness, wood, sweetness, barrel. Balanced and delicate. Wow. Delivers.

Sweetish and smooth with loads of wheated bourbon, toffee, vanilla, hints of coffee, chocolate, syrup, licorice, roastiness, molasses and earthiness. Tasty and quite balanced despite it's not super thicc.

375ml (thx, Chris S.!) @ Brian's shared with Ryan and Phill.
Aroma: American oak, coffee, just a little bit of green pepper, moderately sweet. Pretty nice integration.
Taste: along the same lines, very boozy.
Overall: pleasant, but I would prefer it to be less boozy and more thick 😊

Poured from 473mL bottle (red wax). Very dark brown with minimal beige head. Aroma of chocolate and coffee. Taste is very chocolate forward with background vanilla, coffee, and bourbon, feintest hint of green pepper on the finish, but very nice.
