Lights Out is a blend of stouts aged in Heaven Hill and Wild Turkey bourbon barrels for up to 24 months. We finished it on over 20 lbs of toasted coconut per barrel, resulting in a stout bursting with coconut goodness. On the nose, aromas of coconut prevail with under ones of rich dark chocolate and bourbon.
On the palate look for similar flavours to dominate along with notes of coffee, black liquorice and vanilla on the finish.

Dark brown. No head. Rich umami, cocoa, bourbon aroma. Bourbon on the palate, too, nice richness. Good body. Lowest coconut quotient of any Lights Out so far. Still, solid stout.

On tap at Twin Sails, pours jet black with a small tan head. Aroma has plenty of toasted coconut upfront, followed by bourbon barrels, and light dark chocolatey roast. Flavour is intensely coconut-forward, bringing out an impressively deep coconut character, moderate bourbon barrel presence—but that perfumey character does show itself a bit—a touch of roast, and cocoa. Massive coconut bomb with plenty of depth. Somehow, the Catching Moonlight wasn’t great, but throwing tons of coconut in made it really good…? Far from the first incarnations of this beer, but this is a pretty satisfying comeback.

Feb 13, 2026 (8/4/8/4/17=4.1): Poured from 355mL can. Near black with dissipating tan head. Nose is bourbon forward. Taste is bourbon with feint toasted coconut and char, light molasses. This can is more bourbon, less coconut and stroopwaffel than 2.5 months prior on tap. Enjoyable and balanced, rounding up to 4.1 this time.

Nice toasted coconut with a light stroopwaffel like quality, feint background barrel character, a touch boozy on the finish. Almost want to give this a 4.1, but it's just shy of rounding up.

On tap at Twin Sails. Pours nearly black with a tan head. Tons of toasted coconut, roasted malts, and bourbon barrels on the nose. Flavour has a really nice toasted coconut character, dark chocolate, dark malts, and nice accents from the bourbon barrel. Very nicely done, though it gets a bit rougher and perfumey as it warms.
