This is the melding of cider with traditional wine making techniques. Clarified juice is completely fermented to dryness in the primary fermentation. The wine then has a liqueur added for a secondary fermentation in bottle – Traditional bottle fermented style. This vintage has had 3 ½ years ageing on yeast lees. It is riddled, disgorged and a liqueur added ready for final consumption.

750ml bottle from Pokolbin Cider House. Pale yellow gold colour, short-lived foamy white head and aroma of apple, barnyard funky. Taste is sweetish, appley, fruity, with some farmhouse funk, vanilla hint and tart acidity. Medium bodied, spritzy carbonation, drying funky acidic finish. Nicely drinkable.
