"Grasshopper" Parfait
For our 10th Parfait we bring you another Barrel Aged Imperial Stout / Missouri Imperial Stout blend! We are internally calling this one "grasshopper", our massive imperial stout finished with loads of Oreos, Vanilla Beans and then finished with the slightest amount of fresh mint leaves. The purpose was to create the beautiful aromatics of the mint, but only taste loads and loads of chocolate, much like a thin mint! We hope you love this festive iteration of Parfait and you all enjoy this holiday with friends and family over a beer!

Can.
A- Black color, black liquid, minimal brown head.
A- Mild soy, mild whisky barrel, chocolate, vanilla frosting, faint mint.
F- Mint leaves, chocolate sauce, soy sauce, slightly sweet, burnt marshmallow.
T- Full body, average texture, average carbonation, balanced finish.
O- I hate mint chocolate as a flavor combination, but for some reason it works for me in beers. Particularly with Perennial and Side Project so STL brewers are doing something right. Really well balanced with mint and a vanilla that goes between a frosting and marshmallow like flavor. Sweet but not cloying. A bit of soy/umami going on as well. Barrel is there but in the slightest way and definitely helps stabilize everything else going on. Well done for sure.

16 oz can. Aroma is chocolaty, minty, molasses, wet stone. Pours like motor oil with a thin tan head that reduces quickly to a ring. Taste is mostly sweet with some light bitterness around the edges and some umami. Very rich, so best shared.
