2024 Bayberry Apple Cider - 750ml 8% ABV.
Locally grown Bayberries were added to our matured apple cider for a prolonged Carbonic Maceration and secondary fermentation of 12 months. This cider drinks like a Sauvignon Blanc - a tart acidity and balanced sweetness, with soft tannins and herbaceous aromatics.
An unusual fruit, Red Bayberry, also known as Yangmei, originates from China. The fruit has a tart flavor, much like a strawberry or raspberry, but their unusual acidic composition includes moderate levels of Gallic Acid, which is typically only found in wines, adding a special complexity to this Limited Release.

750ml bottle from NewLeaf Orchards. Pale golden colour, white foam head that dissipates to a thin rim and aroma of apple, berry, herby, funk. Taste is tangy, tart, appley, fleshy, herbal, with strawberry-like hints, some acidity and tannin. Medium bodied, light carbonation, drying acidic finish. Quite drinkable.
