Miho Imada, Fukucho owner and toji (master brewer), is one of the few female tojis in Japan. This sake is made with the famous soft water of Hiroshima prefecture which gives it deep, persistent flavor. The fruity nose of lime and melon is pressed to the forefront with bold hints of fennel, white pepper and allspice. The flavors gravitate to ripe cantaloupe and black licorice while the minerality from the soft water is evident in the finish. The slightly sweet and clean mid-palate finishes dry.

At the January 2026 DC Brewver gathering. Thanks BeastieFan2k. Poured a nearly clear color. It has that kind of light haze you might find in a spirit. Very light creamy character, some very light herbal character. Very light and delicate. I like it, but I don't know if I like-it-like-it.

Light perfume and some hint of cream. A little fuller aroma than the tozai living I had before. White water pour. Warm mouth feel. Hand cream lotion. Bottle.

Some bullshit BeastieFan2k fed me. Clear. Legs. Dead clear. Nose has green stuff. Lime. Jasmine. Flavor is starchy, lime, jasmine, peach. Good body.
