The Ine Mankai from Mukai Shuzō is produced using an ancient strain of red rice, along with a with a white rice, creating a rose petal coloured sake. In provincial villages and towns within Japan red rice has been cultivated and used in traditional celebrations for centuries, but it is extremely rare to see it used commercially. While studying at Tōkyō University, Kuniko met Professor Takeda, and was encouraged to create a sake with the red rice he knew grew locally in Kuniko's hometown area of Ine. In May 2000, Kuniko released her red rice sake calling it 'Ine Mankai' or ‘Ine in Full Bloom’. It’s well balanced levels of acidity and sweetness make it perfect for drinking with a wide variety of food. Complex cherry & vanilla aroma with unique sweet/tart cherry & pomegranate flavours with a savoury, umami rich palate works equally well with savoury dishes or sweet.

Bottle at Ante, Newtown. Reddish amber brown colour, no head and aroma of rice, savory notes, meaty hint. Taste is sweet, syrupy, rice, fruity, pomegranate, honey, with some tartness. Medium bodied, low carbonation, sweet fruity finish. Quite drinkable.

--Bottled at Koie Ramen Munch, Oslo.-- Bright pale purple. Peppery nose with dark fruit. Sweet with medium body and rounded mouthfeel. Fruity tart prunes, mild grainy salmiak. Peppery finish.

Drank cold. The nose tastes like cherry, rice, smoked and spices. The olfactory intensity is high, and the olfactory persistence is sufficient. The consistency of the liquid is clear. The color is very light amber. The body is structured. The sweetness is medium. The taste intensity is high, and the taste persistence is sufficient. The taste is pleasant. The final mouthfeel sensations are ready to drink. The finish is velvety, long, dry and clean. The aftertaste is of medium intensity. On the palate it brings hints of rice, peach, melon, fruit, smoked and green apple.

Appearance: Pink colour with no head.

Aroma: Rice, alcohol, sweet fruit.

Body: Full body, flat carbonation.

Flavour: Rice, fruit, sweet, some raisin, alcohol.

Comment: Thanks to Inbreak for letting me know this had been added. Got served this as a part of the tasting menu. Rating might be affected with a general more positive experience as part of a one-star meal and/or the old rating found in notes from a few years back.
