Made using the traditional 'Kimoto Zukuri' method to create a strong natural yeast from the mashing of koji, steamed rice and mineral water at low temperatures, this Karaku Kimoto tokubetsu junmai sake is profound with rich, unraveling flavours that stay refreshingly light and dry enough to enjoy with all kinds of food and drink. Brewed carefully with 100% cultivated rice from Kyoto as well as the famous spring water of Fushimi region, this sake draws out its natural acidity and bitterness to hit you full and fast with complex notes of sour grapes and pears soothed with a delicate sweetness. With a surprisingly refreshing palate despite its full-bodied character, Karaku Kimoto allows its bold taste to mingle wonderfully with richly-flavoured food and drinks, balancing itself with different flavours perfectly before delivering its irresistibly enjoyable dry finish. Best enjoyed warmed or at room temperature.

Translucent pour with perhaps a tinge of yellow, no head.
Nose is light perfume, grains, herb, alcohol, honeysuckle, melon.
Taste comprises sugars, honey, floral notes, grains, booze, rice paper.
Medium bodied with note, fine carbonation, semi drying close with a kiss of alcohol.
Drinks well below the stated 16% boost level!

Panda 🐼 at home big thanks to Ed Danlo. New sake style tick! A mostly clear petrol gold coloured pour with a halo of white head. Aroma is semi sweet, waxy, alcohol, pear, earthy honey, alcohol. Flavour is composed of semi sweet, oily, waxy harsh alcohol, solvent, pear juice, oily. Palate is semi sweet, mellow carbonation. some harsh alcohol,

2/2/2023. Bottle shared by danlo, cheers Ed! Pours clear with just a hint of yellowy gold and no head. Aroma is melon, caramelised pear, rice water, flowers, warming boozy notes. Quite sweet initially, with developing bitterness and a little harshness from the alcohol. Quite full bodied, oily, low carbonation. Packs more of a punch than many of the Sake's I've tried.

720ml bottle from Japan Centre. Clear very pale yellow colour, afew small bubbles on top and aroma of rice, citric, boozy. Taste is rice, fruity, caramel hint, citric, grassy booze, warming. Oily mouthfeel medium bodied, low carbonation, dry warm boozy finish. Nicely drinkable.
