Junmai Ginjo is Nanbu Bijin’s regular sake, so is TOKUBETSU JUNMAI (Special Junmai). It can give the fine flavor of Ginjo sake and sweet rice taste, also provide tastes of sharpness and fine feeling by including beautiful outlook. It pairs with any delicious Japanese dishes. Mother water: Subsoil water from Orizumebasenkyo in Iwate Prefectural Natural Park (water of low to medium calcium content). Yeast: M310 Brewing Society of Japan yeast. Rice type Kouji; Ginotome sake rice. Rice type Kakemai; Miyamanishiki sake rice. Polishing ratio (seimaibuai) (精米歩合): 55%. Sake Meter Value (nihonshudo) (日本酒度): +5. Acidity: 1.5. Bottle size: 720 ml. 30/11/2024. Can shared at Ulfborg tasting. Pours without colour and no head. Aroma is very fruity, fragrant rice, liquorice hints. Quite sweet, light bitterness. No carbonation. Fine.
