Served chilled this Classic Junmai Sake offers a very fine texture with harmonious aromas and flavors of macadamia nuts, Chai spice (cardamom, nutmeg), vanilla, heavy cream, and freshly sliced bread.
Served at room temperature, notes of mineral, creme fraiche, sourdough bread, custard, umami, and apples emerge.
When warmed to around 100º F., the texture and flavor build, bringing out more intense umami while still retaining softness of texture. Savory elements of salted custard, cocoa nib, banana bread, toasted nuts, and mineral are evident.

Sweet in the nose with some light mineral, maybe a touch of wax or alcohol-tinged character. Juicy fruits like coconut and soft lychee.
Same character in the mouth. Rich and round, rather unrefined but flavorful. Good with a meal. Thoughtless.

Bottle from an online shop that wasn't Japan Centre, but I can't remember what it was called. Pours clear and still. Aromas of light peach. Taste is boozy and light rice. Clean finish.

Drank at room temperature. The color is slightly yellowish. The olfactory intensity is high. The olfactory continuity is appreciable. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas is of white peach, mineral, strawberry, coconut, honey, spices and white pepper. The first impression of intensity in the mouth is of strong sake. The aroma on the tongue is rather dry. The body is full. The taste intensity is high, and the taste persistence is good. The taste is pleasant. The final mouth sensations are ready to drink. The finish is long, dry and clean. The aroma in the mouth bears signs of melon, coconut, mushroom, gin, resin, spices and umami. VARIATIONS Plus, drunk cold (My vote 6.8/10) The color is a hint of yellow. The olfactory intensity is high, and the olfactory persistence is sufficient. The taste on the nose - dominant aroma is of malted Koji rice. The taste on the nose - secondary aromas finds impressions of melon, anise, umami and white mushrooms. The first impression of intensity in the mouth is of medium strength and indecisive sake. The aroma on the tongue is rather dry. The body is full. The gustatory intensity is high, and the gustatory persistence is sufficient. The final mouth sensations are ready to drink. The taste is given tones of vanilla, melon, gin and kiwi. VARIATIONS Plus, drunk hot (My vote 7.0/10) The color is a hint of yellow. The olfactory intensity is high, and the duration is sufficient. The taste on the nose - secondary aromas traces impressions of vanilla, white peach, apricot, anise, mimosa and mineral. The first impression of intensity in the mouth is of strong and powerful sake. The aroma on the tongue is medium dry. The body is full. The taste intensity is high, and the taste persistence is sufficient. The taste is pleasant. The final mouth sensations are ready to drink. In the mouth the aroma is that of apricot, honey, almond and white flowers for a delicate aroma.

180ml bottle. As Sho Chiko Bai Classic Junmai Sake. 15%. Clear very pale yellow colour, no head and aroma of rice, melon, grassy, earthy, boozy. Taste is rice, papery, gluey, earthy, grassy, booze. Oily mouthfeel, medium bodied, low carbonation, dry warm boozy finish. Quite OK.

At Wagamama, Southbank. Not had sake before. Slightly scented veggie aroma. Clear. Umami, which develops some sweetness. Salty. Plums. Roots/herbs.Veggie tones. Thin. Smooth, if oily. A warming finish. I liked it. Reminded me of the local schnapps I’ve had in Germany, only sweeter.

Bottled, from Super Joseth, Manuel Antonio, Costa Rica. Clear and colourless. Peppery licorice aroma. Mid sweet with some pear juice, grains and salmiak. Mild peppery heat in the finish. Not that complex.

Drank a full 750ml myself during dinner for my brothers bachelor party. pours clear with semi sweet aromas. tastes of coconut, lemon, vanilla, rice, with some alcohol warming.
