Blend #1 (Winter 25/26)
Our Foeder series is a solera style blend consisting of both European and American influenced farmhouse ales. Ours is the third fill of this American Oak vessel which previously held residence at Caius Farm Brewery in Branford, CT. We use various threads to work towards shaping the resident microbes and influence future generations, and some of those blends move into other barrels or cut and paste explorations such as our Decopaged series, while other blends are released directly as an example of the program that can be referenced in future batches that pass through the same vessel.

Brewery draught, 1/2/26, as pictured.
Nice and rustic with random grains and a bit of bright, lemony acidity. Hints of oak with a touch of bread. If there's Brett here it's very slight. Mostly Sacch.
Soft, with more oak than in the nose, but still very tasteful. Juicy lemon and newly emerging Brett acidity with gentle Sacch yeast showing nothing crude. Excellent, robust, deep texture drinks like it could support an 8 or 9% abv, but is satisfying and not overbearing at this abv either. The fresh, bright, lemony acidity on the end really refreshes and keeps the beer bright and drinkable. Great stuff, been a bit since they've released a saison of this caliber.
