We might be heading toward the end of the year, but that doesn’t mean we can’t drop a silly beer into our brew plans to celebrate the festive season springing upon us again. Our TIPA game has been ever evolving here at Polly’s since that first brew of DDH Spur back in 2020 and we’re back once again with our latest step into this incredibly complex and intense evolution of the IPA style. Frozen Solstice takes four hop varieties that have interwoven themselves throughout our history in Talus, Nectaron, Strata and Simcoe, and amplifies them up to eleven, with a dry hop charge touching 30g/l of flavour, and a hype factor up to twelve by utilising cryo versions of both Talus and Nectaron for extra potent flavour. Expect to find bombastic levels of fresh cut citrus, and insane amounts of tropical fruits positively bursting at the seams from this all in, maxed out beer not for the faint of heart.

11/3/2026. Can shared by LazyPyro, cheers Chris! Pours well. Aroma is sweet, dank, tropical, hoppy, stone fruits, midget gems. Quite sugary sweet, with some nice bitterness. Full body, smooth, soft carbonation. Nice aroma, though the sweetness made it a bit clammy.

Murky orange topped with a lasting creamy white cap.
Nose is orange zest, grass, punchy tropical fruits, pineapple, mandarin.
Taste comprises juicy tropicana, mandarin, mango pulp, pine resin, hop spice.
Medium bodied, fine carbonation, semi drying close spliced with juicy come lightly resinous hop bitterness.
Tidy TIPA ... juicy and boosty without getting overly sweet.

440ml can. Murky golden with a white head. Aroma of candied tropical fruits, passionfruit, papaya, peach. Taste is very sweet, candied tropical fruits, papaya, peach, passionfruit. Full bodied. A tasty TIPA but found the sweetness a bit cloying for me so knocked off a couple of points just for that.

Can. A mild to medium haze on this orange gold beer, a small bubbly pale cream colour head. Smooth and fairly light palate for a Tipa, decent fine minerally carbonation. Smooth pale malts, a good creamy sweetness. The hop delivery is bloody marvellous. Big juicy Talus, that lovely peachy citrus. Nectaron supporting with honeyish stone fruits and lesser tropical fruits. Soft pine throughout, of course. The old Warehorse Citra fills in the gaps with, guess what, citrus! A fair hop spice nip on the soft finish. Super duper. Fantastic hop fruits intensity and a bit of and edge as well. The abv just slides on by.

Can from House Of Trembling Madness. Milky golden body with a thick off-white head. No visible carbonation. Faint lacing. Aroma of peach and apricot. Flavour of honey, straw and orange. Medium to full body with a chewy mouthfeel. Very soft fizz. Sweet and heavily hopped. It drinks easily for the ABV.
