Made from a blend of many different Washington grown apple varieties, including many foraged from old Orcas Island heritage orchards. Prominent varieties include Gravenstein, Tompkins King, Rhode Island Greening, and Roxbury Russet. Some crabapples are added for layers of tannin and acidity - including Evereste Crabapples from the island and crabapples from Topcliff Farms in Prosser, Washington such as Hewes Virginia Crab and Dolgo.

This cider is naturally fermented with the wild yeast living on the fruit. After fermentation this cider is lightly barrel-aged in whiskey barrels for 4 months.

Clear 750ml via Press, around $20. Lo-ball at home.

Pale straw, dusty, soapy soda head.
Boozy floral, sweet onion, sweet brine, bittersharp, peppery whiskey nose.
Nice buttery barrel sweetness that feels more like chardonnay than whiskey. Creamy, middle high acid, low tartness, slight tropical, white pepper, white grape tail.
Low to mid-low carb, creamy, low acid, some winky tartness, very smooth abv for 8%+.

Feels like I'm underrating it a bit because nothing smacks. Great blending.
