We were inspired by the lambics brewed more than a century ago to make a gueuze to celebrate the 125th anniversary of Brasserie Cantillon. Back then, it was common for brewers to use more raw wheat in their brews than the 35% we use today. This Gueuze 125 is a blend of lambic brewed on 27/12/2017 with 50% raw wheat and 50% malted barley and bottled on 10/12/2021. To be consumed preferably within 20 years after the bottling date.

125 years ago, bottles didn't have labels like they do today; lambic brewers marked their gueuze bottles with a thick line of white chalk instead. These marks also served to indicate how the bottles had been placed during refermentation and aging in the brewery, and in which position they should be replaced once they arrived in the cellar of a bar or café.

Rather than designing a more traditional label for our Gueuze 125, we decided to pay homage to our past by hand painting every bottle with stroke of white paint.

Bottle at Moeder. Clear golden pour with a frothy white head. Bouquet is floral, baked pear with warm spices, and apple cider vinegar. Super mild carbonation. Florally highlights with mild funk and horse blanket notes. Moderate sourness with an absence of the fruity esters on the nose. Bravo…

Bottle at the Loon Factory. Loads of depth here. Lovely minerality and plenty of floral herbal bitterness. Fantastic condition too. Ace.
