Great dry cider takes time. This is a drink bursting with energy, three years on from when it was pressed, and with surely enough intensity, structure and flavour that it will keep improving for year after year. Three great, vibrant apples come together naturally - ripening at the same time - to be co-fermented and create a drink of such viscosity that it feels like liquid velvet on the tongue. Presented in collaboration with Hereford Beer House, where owner and operator Sion Harris always has room for great cider. No visit to the city is complete without a cider in this bar.

500ml bottle from Ross on Wye. Hazed golden colour, short-lived foamy white head and aroma of apple, fruit, funk hint. Taste is tangy, appley, fruity, with some funk and drying bitter tannin. Medium bodied, light carbonation, dry tannic finish. Nicely drinkable.
