Our Brett Venture series is the exploration of how single strains of Brettanomyces ferment and condition a Saison malt bill. Each Brett Venture will be fermented in and aged in wine barrels with a different Brettanomyces strain to showcase its unique characteristics.

Brett Venture #2 uses the same saison malt bill found in Brett Venture #1, but is 100% brett fermented with a strain from Drie Fonteinen and aged in oak barrels for 10 months.

750mL bottle, 2013, shared by THE Doug T (first person to ever buy a Side Project beer) on 9/30/23. Clear, very pale golden. Still well-carbonated, forming a medium-sized, white head of modest retention. Nose isn't sour/lactic at all, and seems to have only been innoculated with the intended Brett. The brett has developed nicely, and extensively, unsurprisingly, over ten years, now yielding definite pineapple and maybe even a hint of coconut. Though perhaps that's the barrel tannin (probably more likely). Clean, though not a ton of character from the Sacch, rather white peppery and dry, unripe stone fruitiness. In the mouth it's clean, full of Brett with big pineapple notes, though not exactly rich or juicy, but very lean and dry, as is the beer, though there's still plenty of body, the barrel tannin having helped with that, as well. Cracker, biscuit, wheat, hints of lemon and a good, robust but not overbearing tartness. Impressive how well this has held up and interesting to see how the brett has developed in an unusual way (nothing like, say, Orval, for example).

Bottle thanks to Dustin. Pours a cloudy gold with medium frothy white head that diminishes quickly. The aroma is strong brett, funk, oak, lemon zest. Thin mouth, lemon, funk, brett, oak, light dry finish, very good.

Bottle at Side Project tasting night; hazy golden amber pour with a thin white head, citrus and peach aroma, smooth malts in the taste along with citrus rind, tart fruits some funk. --- Beer merged from original tick of Brett Venture #2 on 01 Apr 2015 at 20:08 - Score: 9

Bottle. Cloudy golden amber color, huge white head. Aroma of dusty and funky peach, raw bread. Taste is softly sour stone fruit, white pepper. OK.

Bottle shared by Peter. Pours cloudy gold with white head. Nose and taste of lemongrass, yeasty apple, saison yeast, white wine, lemon and oak. Medium body.

Bottle shared late night RBWG. Pours hazy yellow with a frothy white head. Good tart lemon nose, pale wheat, mild funk. Light sweet flavor, some ripe lemon, soft rindy bitterness, sugary wheat. Light boxed with fine carbonation. Balanced lemony tang in the finish, some doughy wheat, mild sour bite.

Appearance is the same as #2 with lacto. Nose is a bit more tart, grassy and floral. still has a band-aid taste to it. I guess it’s a bit better than the lacto version.
