Breaking away from the recent trend of super-hopped India Pale Ales, Wildcat is brewed to provide the aroma and taste hop-heads crave, without overwhelming your pallet. Brewed with four different hops, and five different malts, our India Pale Ale is complex, while still remaining approachable. Magnum, Cascade, Liberty, and Saaz hops lend our India Pale Ale a citrus aroma, with a touch of noble hop distinction and herbal complexity, and a smooth, clean bitterness. The use of five different malts in our grain bill provide Wildcat with the complex flavors of malty sweetness, bread, and caramel that we use to round out our brew. Just like the ‘Free State’ community that inspired its name, Wildcat India Pale Ale blazes its own path into history.

4 oz pour on draft at Spacebar. Clear golden orange with off-white head. Aromas of citrus, floral. Tastes of citrus, bitter floral, light soap. Medium body with a dry finish.

Slightly hazy copper coloured body with a very thin, half centimetre tall tan head. Aroma of caramel, malt, toffee, light earth, grass and a bit more malt - not much hops at all noticeable in this. Medium-bodied; Definite toffee and malt flavours up front with not much else aside from some light raisins and a touch of apricots or peaches - no hops, no depth, no complexity - just caramel and toffee malt and that’s it. Aftertaste is quite bitter with only a faint touch of metal and funk to couple with the malt. Overall, a pretty poor offering, especially for the style - this one isn’t worth trying, even if you get it for cheap, just because there are far better options and even if you’ve had them before, this isn’t worth the effort for a ’new rating’. I sampled this twelve ounce bottle purchased from Total Wine in Chantilly, Virginia on 02-August-2015 for US$2,34 sampled at home in Washington on 02-September-2015.

From a 12 oz bottle shared at home. Pours a hazy copper with an off white head. Fruity nose. Flavors of grass. Bitter finish.

Bottle. Pours amber with a small head. Very light aroma: coppery, lager, slight skunk. Taste is light apple, light orange peel. Nothing I’d seek out.

Their lighter pale ales are a little better than this IPA. Gold pour with ok head and lacing. Light bitter finish, with some sour mash. Not super hoppy, mostly because of lighter hop varieties. Tap at brewpub.

Draft at the source.Poured a nice clear orange color with a small white head. Aroma was light orange peel, some earth notes. Flavor was nice orange notes, with some malty character. Pretty tasty.

12 ounce bottle from Cork & Fork, Gainesville, opened 6/5/14. Pours a clear amber color with a large creamy tan head. Good head retention. Aroma of spicy, herbal, earthy hops, raw malt and a bit of caramel. The taste is bitter earthy, pine hops, a bit of resin. Caramel malt and a bit of raw malt. Medium bodied, moderate carbonation, moderate lingering bitterness, decent balance, quite drinkable.

12oz bottle I think I picked up at Frankllins. Pours a clear, burnt orange with some lacing, sudsy white head. Nose is has some cracker, some lemony hop, a little yeast, some soap. Tough to pull out one hop aroma. Flavor is fine, bitter, malty, soapy, a little pine. Zesty on the finish. Solid but also unremarkable.

First! Mild honey nose. Cloudy copper, medium yellow head. Walnut, dried leaves flavor. Walnut and peanut hulls finish. Alcohol noticeable, stinging mouthfeel, astringent Quite bitter without personality.
