Round, rich malt with a good, clean barley character giving honey and white bread. Not too much hop (though this is also almost 3 months old), but enough to satisfy, while leaving the yeast and malt front-and-center. I like the soft, fresh herb with no aggressive pepper. Bit of earthiness, touch of mustiness, as well. Feels quite authentic.
A bit hoppier in the flavor, or bitter, perhaps. Has a bit of black pepper melding with an apple-forward yeast. White bread and light honey from the malt easily support. Lingering hop bitterness with succulent, big fat malt, though not too sweet (rather bready). Very satisfying, malty beer. The hop bitterness helps refresh. Would like to see more drinkability stemming from the yeast/attenuation and less from hop bitterness, though.

Pours a pale, lightly hazy, copper-gold, with mid-sized head. Aroma is grass, grain, straw, cracker. Flavors follow. Clean, crisp mouthfeel.
