Nose is immediately intensely compelling and showcases almost exactly what I want in a barrel-aged, fruited saison: funk, a good amount of it, low but not-nonexistent acidity, soft, rounded, well-aged and integrated fruit, and a good amount of Sacch. character showing authentic saison yeast (like Dupont, Blaugies, Fantome...). This one has all of these in spades, with just a touch of poopy barnyard as the cherry on top.
The flavor goes just about as well...Wonderful texture with spritzy, tight carbonation, deep attenuated malts and a big mineral and moderate juiciness from the fruit. No overt oak and no acetic, big lactic. Mellow but very flavorful. Very careful fermentations and aging, it screams. And you can tell it's a saison with the preferable signature (pear, plaster, black pepper, not bubble gum, clove, banana). Insanely flavorful, balanced and drinkable. I think the only way to possibly improve this would be to get a bit more expressive Brett in here (which, honestly, it may have, and it just doesn't have enough age for it to have manifested yet). Other than Hill Farmstead, this is the best saison I've had since, well...the last time I was at The Seed.

Bottle shared by CLW-thanks, Chris! Cloudy orange-red, ring of head, no lacing. Aroma strong sweet over tart fruit, wet basement. Taste strong, tart, blackberry, funky. Smooth texture, soft carbonation, finish as taste.

500 ml. Thank you S & L. Aroma is mild tannin or oak, blackberry. Flavor has a touch of Brett with a lot of tart blackberry.Juicy, tangy, not overly sour. Malty, with mellow barnyard funk. Tight carbonation. Nice yeast character marries with Brett and blackberry.
